Ricotta—it’s not just for dinner anymore!
Wait, there’s WHAT in this cookie? Maybe I grew up leading a sheltered life, but the idea of willfully putting Ricotta cheese in a cookie recipe seemed weird to me at first. And then I tried one. And then the world changed and I had a new favorite cookie. And if you’ve seen me, you’d know I’m a guy that likes cookies. They are soft and mild in flavor, with a very light hint of almond in the icing. Simply put, these cookies will out a smile on your face and a spring in your step.
