Stayman Winesap Apples- 1/2 Bushel

I am so happy to have some of these! We have used this variety of apple for the absolute best pies in the world for many years. They are old fashioned but the slices hold their shape and love the cinnamon and nutmeg spice to accent their flavor. The juices released gel nicely with a little help from a tablespoon of corn starch. And if you want to try an old early American recipe for Apple Pie for supper add some diced ham and cheddar cheese before you cover it with the top crust.
